Fall Recipe Feature: Chewy Pumpkin Spice & Molasses Cookies

With Thanksgiving right around the corner, this time of year brings out the baker in many of us cooking enthusiasts. Our Portola Hotel & Spa, Pastry Chef Marcos, is sharing one of his favorite recipes of the Fall Season! Highlighting, sugar, spice and everything nice, Chef’s Chewy Pumpkin Spice and Molasses Cookies will quickly become a family favorite!

Chewy Pumpkin Spice & Molasses Cookies

Yield: 2 dozen cookies
Ingredients:
1/2 LB butter
3 C sugar
2 eggs
1 TBSP white vinegar
3/4 C molasses
3 1/3 C flour
1 TBSP baking soda
1 TBSP pumpkin spice

Directions:
1. Preheat oven to 325 degrees.
2. Beat together butter and sugar until fluffy, add eggs and mix well.
3. Add molasses and vinegar, and blend until everything is combined. In a separate bowl, sift and combine flour and baking soda, then add pumpkin pie spice.
4. Stir in flour mixture (in small amounts at a time) to the wet mixture until combined.
5. Using  a two-ounce cookie scoop to drop balls onto prepared baking sheet. Sprinkle lightly with sugar. Bake at 325° for 9-10 minutes.
