If you’ve ever been a guest here at the Portola Hotel & Spa in Monterey and dined in The Club Room for breakfast, chances are, you’ve met Chef Linda. With an infectious smile and a true passion for what she does – – Chef Linda is a legend, not only here at the Portola, but in the world of omelets!
We recently had the chance to sit down with Chef Linda and talk all things – OMELET.
Question: Describe the perfect omelet.
Chef Linda: Light and fluffy because less is more. I prefer to add a little of each ingredient and use a pinch versus a tablespoon. By sautéing the ingredients before adding the egg, flavors truly come through. Also, I always use whole eggs and egg whites
Question: What is the most popular omelet requested by guests?
Chef Linda: The Vegetarian! I think more people are health conscious and the protein still comes from the eggs – AND it’s delicious.
Question: What are your favorite condiments to pair with your omelet?
Chef Linda: Fresh ground pepper and medium salsa – because you don’t want to overpower the flavors of the omelet.
Question: What inspired your signature, crispy cheese topping?
Chef Linda: Two years ago, I was melting cheese in a pan and it was crispy. I actually ended up throwing it away. But I decided to try it again, and I loved it! From that day forward, I featured it as a garnish and our guests love it! There is a secret though… if you burn it, it’s ruined, so it needs to be just right!
Question: How long does it take to cook the perfect omelet?
Chef Linda: Exactly three minutes!
Question: How many omelets can you cook at one time?
Chef Linda: Five!
Portola: What’s your record, for the most omelets made in one day?
Chef Linda: 400 – now that was a BUSY day!
Question: How long have you worked at the Portola? Have you been making omelets from the beginning?
Chef Linda: I’ve been working as a chef at the Portola Hotel & Spa for over 22 years and have been behind the Omelet Bar for the past 15.
Question: What’s your favorite breakfast beverage pairing?
Chef Linda: I’m a purest and like to keep it simple- a cup of coffee with cream and one sugar cube.
Question: What do you love most about your job?
Chef Linda: I love when I give a guest their omelet and the look on their face is pure happiness – this lets me know, I have done my job and helped to make their day that much brighter.
