Portola’s Summer Recipe Feature: Coke Farm Heirloom Tomato Salad

Summer is here and there’s no better season to throw an al fresco dinner party! Set up those bistro lights, bring out the farm table, and invite some of your favorite pals over for a summer-inspired dinner they won’t soon forget. Our Portola Hotel & Spa Executive Chef Danny Abbruzzese is sharing a fresh and summery salad recipe, featuring locally sourced Heirloom Tomatoes from Coke Farm, located right here on the Central Coast.

Coke Farm Heirloom Tomato Salad
Serves 4
Ingredients:
4 each Medium- Coke Farm Heirloom tomatoes, ¼ inch sliced
20-24 slices of prosciutto
4 balls fresh Buratta cheese
Terre Bormane  Balsamic Vinegar
Extra Virgin Olive Oil
Maldon Sea Salt; to taste
1 bunch fresh basil

Directions:
Arrange 5-7 tomato slices, alternating varieties/colors in a circle on four salad plates. Place Buratta cheese on the plate and season tomatoes with Maldon sea salt and pepper. Place about 6 slices of prosciutto on the plate and then whimsically dress tomatoes with olive oil, vinegar, and fresh basil leaves. Serve immediately.
