Spring Recipe Feature: Coke Farm Baby White Turnips

Locally grown, fresh produce is in abundance in our Tri County area, and here at the Portola Hotel & Spa, we love featuring the bounty of the season in all our menus, whether it be catering or in our three restaurants: The Club Room, Jacks Monterey and Peter B’s Brewpub.

We are proud to highlight fresh turnips from organic farm, Coke Farm, located in San Juan Bautista, California, just 35 miles north of Monterey.

Coke Farm Baby White Turnips

Serves 2

  • 6 White Baby Turnips peeled & blanched
  • ½ C     Sugar
  • 2   C      Cider Vinegar
  • 1   C      Champagne Vinegar
  • 1   Tbs   Kosher Salt
  • 1   Tbs   Whole Coriander
  • ½ tsp  Chili Flakes
  • ½ tsp  Fennel Seeds
  • 2  Tbs  Parsley (chiffonade)

Directions:

Combine sugar, cider and champagne vinegars, salt, coriander, chili flakes, fennel seeds and half of the parsley in a sauce pan. Bring to a boil and reduce by half. Add turnips and simmer for 6-8 minutes-until turnips are fork tender.

To Serve:

Arrange turnips in the center of a bowl, add poaching liquid and garnish with reserved parsley.
