St. Patrick's Day is almost here, and that means celebrating with pub fare and drinks. This year at Peter B's Brewpub, we're serving up St. Paddy favorites like Reuben on Rye, Paddy's Irish Whiskey Shots, Green Beer, and Irish Car Bombs. The Perfect Rueben Recipe
Rueben Ingredients
2 slices of marbled rye bread
4 oz. thinly sliced USDA choice Angus corned beef brisket
3 oz. County Fair sauerkraut, drained
2 slices of Block and Barrel Swiss cheese
¼ cup House made Thousand Island dressing (ingredients below)
House Made Thousand Island Dressing Ingredients
1 cup mayonnaise
¼ cup yellow onions
2 tbsps. ketchup
2 tbsps. sweet pickle relish
1 tsp. lemon juice
½ tsp. paprika
¼ tsp. salt
Directions
Mix all of the ingredients for the House Made Thousand Island dressing in a bowl until well combined.
Butter one side of each slice of bread.
Spread the dressing on both slices of bread (the side not buttered).
Put the cheese on one side of the bread, and place both slices, buttered side down on a grill or pan medium high heat.
In a second pan, heat the corned beef and sauerkraut.
When hot, place the corned beef and sauerkraut on one side of bread, and put the other side on top, making sure both sides of the bread are browned.
